Ingredients:

  • 1/2 lb watermelon, trimmed, seeded, and cut into cubes
  • 1/2 lb cantaloupe, trimmed, seeded, and cut into cubes
  • 2 Tbsp toasted sesame seeds
  • 1 Tbsp chives, finely chopped
  • 1 Tbsp mint, finely chopped
  • 1 teaspoon salt
  • 1/4 cup raspberry vinegar
  • 2 Tbsp sugar
  • 1 tsp sesame oil
  • 6 oz romaine lettuce

Instructions:

  1. In a large bowl, toss together the watermelon, cantaloupe, sesame seeds, chives, mint, and salt.
  2. In a separate bowl, whisk together the raspberry vinegar, sugar, and sesame oil, then pour over the salad and toss to coat.
  3. Cover and refrigerate for at least 30 minutes or until chilled through.
  4. Serve by laying a romaine lettuce leaf or two on a salad plate, and spoon a portion of the melon salad on top. Sprinkle more toasted sesame seeds on top if you wish
