Ingredients:

  • 1 cup baby spinach
  • 1/3 cup winter squash
  • 1/2 cup cauliflower
  • 1/4 cup white onion
  • 1/2 cup diced carrots
  • Fresh rosemary
  • 1/4 tsp cumin powder
  • 1/4 tsp red chili flakes
  • 1/4 tsp oregano
  • 1 Tbsp extra virgin olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Juice of 1/2 a lime

Directions:

Preheat oven to 400F. Mix veggies (except spinach) with oil, garlic, salt, pepper, and all dried herbs. Place in the oven and bake for about 25-30 mins. In a salad bowl, combine the spinach with roasted veggies, lime and enjoy!
